Vanilla Poached Pears

Ingredients

  • 1 kg firm pears
  • 500 ml water
  • 120 g sugar
  • 1 piece vanilla pod
  • 1 piece unwaxed lemon
  • 1 pinch salt

Instructions

  1. Rinse two clean screw-top jars with boiling water and set them aside. Peel the pears, quarter them, remove the cores and cut into wedges.
  2. Heat the water and sugar in a wide pan. Split the vanilla pod lengthways, scrape out the seeds and add both seeds and pod to the syrup.
  3. Pare two strips of peel from the lemon and squeeze out the juice. Add both to the syrup with a pinch of salt.
  4. Slip in the pear wedges and poach over gentle heat for 20 minutes, until soft but still holding their shape.
  5. Pack the wedges into the jars, top with the hot syrup to the brim, seal at once and let them cool upside down.
